Waffles are the god tier of breakfast food; so delicious and so filling! To make things even sweeter, we've added a coconut twist.

Ingredients
250g plain flour (swap out for GF if necessary)
1 teaspoon salt
4 teaspoons baking powder
1 tablespoon caster sugar
350ml coconut milk
75g melted Earth Balance or your preferred vegan butter
1 teaspoon vanilla extract
Optional:
Fresh berries
Maple syrup
Powdered sugar
Method
1. Sift flour into mixing bowl to avoid clumps
2. Add the rest of the dry ingredients and mix
3. Make a "well" in the middle of your dry mix and then add wet ingredients, stirring thoroughly
4. Add batter to the waffle maker and cook according to instructions
Add berries to decorate and enjoy!
