Vegans and vegetarians rejoice! After a little bit of trial and error we've managed to track down a beautiful chipotle mayo - perfect for vegan burgers and #tacotuesdays

1 cup cashews soaked overnight

1 chipotle pepper or 1 tbs chipotle sauce
1 clove of garlic
1 tsp cumin powder
Pinch of salt
Play with seasonings to taste
1. Blend the water, lime juice and cashews until desired consistency. Add more water if you like is slightly thinner or less if you like your mayo THICC.
2. Add remaining ingredients and blend until smooth.
3. Serve chilled.
